Tomato Mozzarella Tower

Ingredients(6 people)
4 medium-sized tomatoes
2 tbsp olive oil (± 30 ml)
Salt and Pepper
1 tsp dried oregano or thyme (± 5 ml)
2 mozzarella balls of 125 g each
 
For the pesto
1 garlic clove
10 basil leaves (± 25 ml)
2 tbsp grated Parmesan cheese (± 30 ml)
Salt and pepper
5 tbsp olive oil (± 75 ml)

Pre-heat the oven to 200°C / Th 6-7.

Slice the tomatoes into large round slices (at least 18 all together). Arrange them on the Silicone Baking Sheet with Rim (set on the cold oven rack) and coat them with olive oil and season to taste with salt, pepper and dried herbs. Cook in the oven for 15 min. Allow to cool for 10 min.

Prepare the pesto : Cut garlic clove into 2 pieces and remove the core. Place garlic in the Herb Chopper, and add the basil and the grated Parmesan. Chop (approx. 15 pulls). Add some salt, pepper and olive oil and mix again.

Slice each mozzarella ball into 6 round, thin slices.

Place one tomato slice and one mozzarella slice in each of the six bases of the Molding Tower. Using the Basting Brush, spread pesto on the slices and continue to add layers of tomato and mozzarella coated with the pesto until you use up the ingredients. Place one round slice of tomato on the top of each. Make 2 towers, close them and refrigerate for at least 30 min.

Serve with the remaining pesto and a mixed salad.
