Roasted Broccoli and Parmesan Cream Gratin

3 large heads of broccoli (± 1.5 kg)
1 small onion
1 garlic clove
75 ml olive oil
Salt and pepper
150 g Parmesan cheese
60 g all-purpose flour
60 ml sunflower oil
600 ml milk (room temperature)
1 pinch grated nutmeg
250 ml heavy cream

Step

Preheat the oven to 250°C / Th 8-9.

Using the Paring Knife, cut the broccoli in small florets, wash and drain.

Peel the onion and garlic and chop them using the Herb Chopper.

Place the broccoli, the contents of the Herb Chopper, the olive oil, salt and pepper in the That’s a Bowl 4.5L. Seal the bowl and shake well. Pour into the UltraPro 3.3L, cover and bake for 20 min.

Grate the Parmesan using the FusionMaster Grater: Star Cone.

In the MicroCook Pitcher 1L, mix the flour and sunflower oil using the KPT Beater. Add the salt and pepper, then slowly add the milk while stirring constantly. Cover and microwave for 3 min. at 600 watts. Stir and microwave for an additional 2 min. Stir again, then add the grated nutmeg, half of the grated Parmesan and the heavy cream.

Pour the mixture over the broccoli in the UltraPro, sprinkle with the rest of the Parmesan and bake in the oven, without cover, at 220°C / Th 7-8 for approx. 15 min.
