Mini Spicy Tuna Muffin

1 garlic clove
1 shallot
2 sprigs of cilantro
75 g tuna in oil (drained and split into chunks)
50 ml olive oil
50 ml red wine
2 tsp curry powder (± 10 ml)
2 tsp ground coriander (± 10 ml)
75 g all-purpose flour
1 egg
1 tbsp yogurt (± 15 ml)
2 tbsp heavy cream (± 30 ml)
2 tsp baking powder (± 5 ml)
Salt and pepper

Pre-heat the oven to 180°C / Th 6.

Peel and cut the garlic into 2 parts, remove the small green core. Peel and cut the shallot into 4 parts.

In the Herb Chopper, mince the shallot, garlic and fresh cilantro and place them in the EZ Mix N Stor 1L.

Add the tuna, olive oil, red wine, curry powder and ground coriander, mix together using the KPT Silicone Spatula and allow to marinate for 30 min. (optional).

Then add the flour, egg, yogurt, cream, baking powder, salt and pepper and mix together with the Silicone Spatula.

Place the SBF Mini Muffins on the cold oven rack. Place some mixture in each cavity and bake for 25 min.
