Leek and Cod Fish with Gomasio and Sesame Oil

500 g leeks (white parts only)
500 g cod fish (1 thick piece)
pepper
100 ml sesame seeds (± 60 g)
1 tsp salt (± 5 ml)
1 tbsp sesame oil (± 15 ml)
1 tbsp shoyu or soy sauce (± 15 ml)

Using the Chef Knife, cut the leeks in 2 cm pieces (green part can be kept for a soup).

Pour 400 ml in the water tray of the Micro Gourmet. Place the steamer base on the water tray and arrange the leeks inside. Cover and microwave for 20 min. at 600 watts. Allow to stand for 5 min.

ForCut the cod in 4 portions, season with pepper and set them in the colander tray of the Micro Gourmet.

After the cooking and the standing time of the leeks, add the colander tray on top of the steamer base, cover and microwave for 4-5 min. more at 600 watts. Allow to stand for 5 min.

Using the Chinois, rinse the sesame seeds and drain them well. In the Chef Series Pure Cookware Frypan 20 cm, grill the sesame seeds on high heat until they are golden brown. Allow to cool.

Prepare the gomasio: using the Herb Chopper, blend the cold sesame seeds until you have a thin powder. Add the salt and blend for a few more sec.

Season the leeks with sesame oil and shoyu. Serve the cod on top of the leeks and sprinkle with the gomasio (approx. 1 tbsp per serving).

Alternative: For a delicious variant, you can replace the leeks with the same amount of Swiss chard.

Tip: the leftover gomasio can be stored a few weeks in the S.S. Bowl 300 ml or the Serving Cup. It’s exquisite for seasoning any fish, white meats, steamed  or raw vegetables.
