Fennel and Rucola Salad

1 red onion
600 g fennel
1 garlic clove peeled and mashed
1 tbsp mustard with seeds (± 15 ml)
1 tbsp balsamic vinegar (± 15 ml)
1 tsp honey (± 5 ml)
2 tbsp olive oil (± 30 ml)
salt and pepper
100 g rucola
30 g pine nuts

Peel the red onion, cut it into 4 pieces then cut each quarter lengthwise into 3 pieces.

Remove the leaves and the core of the fennel, cut them into 4 pieces then cut each quarter again lengthwise into 3 pieces like the onion.

Pour 400 ml in the water tray of the Micro Gourmet. Place the steamer base on the water tray and place the onions and fennel inside. Cover and microwave for 20 min. at 600 watts. Allow to stand for 5 min.

In the Space Saver Bowl 300 ml, mix the mustard, balsamic vinegar, honey, olive oil, salt and pepper, using the Click Series Whisk.

Season the cooked vegetables with the dressing, then just before serving, gently mix the warm vegetables with the rucola and sprinkle with the pine nuts.
