Chocolate and Vanilla Sandwich Cookies

Chocolate Cookie Dough
120 g brown sugar
140 g butter (melted)
160 g all-purpose flour
1/2 tsp baking powder (± 2 ml)
1 pinch of salt
60 g unsweetened cacao powder
1 tbsp water (± 15 ml)
 
Vanilla Filling
50 g butter (softened)
100 g powdered sugar
1/2 tsp vanilla extract (± 2 ml)

Preheat the oven to Th 6-7 / 190°C without convection.

In the Mixing Bowl 8 ¾, mix all ingredients of the chocolate cookie using the Silicone Spatula until you have a consistent dough.

Set the SBF Mini Football on the cold oven rack and evenly divide the cookie dough into the six cavities. Pack using the back of a tablespoon.

Bake for approx. 15 min. Allow to stand for 10 min. before unmolding then allow to cool completely.

Slice horizontally using the U-Series Serrated Utility Knife or Bread Knife.

Using the KPT Whisk, mix all ingredients of the vanilla filling then evenly divide in six and fill the cookies.

Allow to stand for 1h if possible and serve with a glass of milk.
