100 g dark chocolate, approx. 55% cacao content (± 3 1/2 oz)
100 g white chocolate (± 3 1/2 oz)
Remove the rack from the oven and preheat to Th 1-2/50°C/125°F with convection.
Break the dark chocolate and white chocolate into small pieces.
Place the SBF Sticks on the cold oven rack. Evenly fill the cavities by alternating pieces of dark and white chocolate, approx. 12.5 g / ± ½ oz of chocolate per cavity.
Place the rack in the oven for 10 min.
Allow to stand for 1 min. then gently tap the rack on the countertop to level the chocolate.
Carefully transfer the SBF Sticks into the Freezer Mate Large Low 2.25L, refrigerate for approx. 1-2h, then gently unmold.
