Red Wine Pear Cake

Red wine pears
200 ml red wine
50 g sugar
1 stick of cinnamon
2 cloves
2 pears (± 200 g each)
2 tbsp cornstarch (± 30 ml)
 
Cake dough
150 g butter softened
125 g sugar
3 medium eggs
175 g all-purpose flour
1 pinch salt
1 tsp baking powder (± 5 ml)
1/2 tsp ground cinnamon (± 3 ml)
1/2 tsp ground ginger (± 3 ml)

In the Microcook Pitcher 1L, combine the red wine, sugar, cinnamon and cloves. Cover and microwave for 2 min. at 600 watts.

Peel the pears, cut them in quarters, then remove the core. Add them in the hot wine, cover and microwave for 8-10 min. at 360 watts, stirring gently halfway through cooking. Allow to cool for approx. 30 min.

Preheat the oven to Th 6 / 180°C, without convection.

In the EZ Mix N Store 2L, mix the butter and sugar using the KPT Whisk. Add the eggs one by one and whisk well after each addition. Add the flour, salt, baking powder, cinnamon and ginger and mix until you have a consistent batter.

Drain the pears and save the juice to make the sauce.

Place the SBF Rectangular on the cold oven rack. Pour the contents of the EZ Mix N Store into the SBF Rectangular and set the pears on the dough. Don’t press them into the dough, they will sink while baking.

Place the rack at the lowest level in the oven and bake for 35 min. Allow to stand for 15 min. before unmolding.

In the MicroCook Pitcher, using the KPT Whisk, mix the saved pear juice and the corn starch. Without covering, microwave for 2 min. at 600 watts. Stir and microwave again for 1 min. at 600 watts. Allow to cool and serve with the Cake.
