Red Cabbage, Apple and Hazelnut Salad

1 red cabbage (± 1,2 kg)
2 apples
75 g hazelnuts
2 tbsp lemon juice (± 30 ml)
2 tbsp water (± 30 ml)
175 ml red wine vinegar
400 ml apple juice
2 tsp salt (± 10 ml)
5 sprigs of parsley
4 tbsp olive oil (± 60 ml)

Step

Using the Chef Knife, cut the red cabbage into 8 pieces and remove the hard core.

Peel the apples, core them and cut them in quarters.

Using the FusionMaster Grater: Slicer Cone, coarsely grind the hazelnut. Then, separately, slice the apples and the cabbage with the FusionMaster.

Mix the apples with the lemon juice and the water to avoid oxidation, then place them in the Space Saver Bowl 600 ml. Refrigerate.

In the MicroCook Pitcher 1L, mix the vinegar, the apple juice and the salt. Set the cover in “open position” and microwave for 7 min. at 600 watts.

Place the sliced cabbage in the That’s A Bowl 4.5L. Pour the hot contents of the Pitcher on the cabbage and mix the ingredients using the Silicone Spatula. Cover the bowl with the seal (not tight) and allow to stand for 1h, stirring from time to time.

Chop the parsley using the Herb Chopper.

Just before serving, drain the cabbage and mix with the oil, the parsley and the apples. Season with pepper and sprinkle with the hazelnuts.
